Pea & Mint Soup

  • 6 potatoes (medium-sized)
  • 350 gram pea
  • 6 mint (leaves)
  • 1 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 1.5 liter water
  • salt & pepper (to taste)


  • Pour oil into a heated pot, add finely chopped onion, and cook for 3-4 minutes, then add finely chopped garlic and mix well.
  • After 1 minute, add diced potatoes, sprinkle with salt & pepper, mix well.
  • Add water, bring to a boil, and simmer over low heat for 15-20 minutes.
  • Once the potatoes are soft, add green peas and mint leaves, bring to a boil, and remove from heat.
  • Use a immersion blender to make a smooth creamy mass.
  • Finally, add salt & pepper to taste.
  • When serving, you can add greek yogurt and mint leaves.
