Pour oil into a heated pot, add finely chopped onion, and cook for 3-4 minutes, then add finely chopped garlic and mix well.
After 1 minute, add diced potatoes, sprinkle with salt & pepper, mix well.
Add water, bring to a boil, and simmer over low heat for 15-20 minutes.
Once the potatoes are soft, add green peas and mint leaves, bring to a boil, and remove from heat.
Use a immersion blender to make a smooth creamy mass.
Finally, add salt & pepper to taste.
