Today I want to share a delicious soup recipe with you. It is such that anyone who tries it immediately asks for the recipe. Minestrone is a thick Italian soup made from a variety of seasonal vegetables and pasta, rice, or both. Today’s version only has pasta added and is really delicious and quite healthy. In short, I recommend that you prepare.

Minestrone (vegan version)

Ingredients

  • 2 carrots
  • 1 onion
  • 3 cloves of garlic
  • 100 g spinach
  • 1 zucchini
  • 1/2-2/3 cup pasta
  • 5 cups water
  • 400 g peeled tomato
  • 1.5 tbsp tomato paste
  • 1/2 bunch of parsley
  • to taste salt & black pepper
  • 2-3 tbsp vegetable oil
  • 2/3 cup beans
  • 1/2 tbsp basil
  • 1/2 tsp oregano

Instructions 

  • Chop onion, garlic (finely), zucchini and carrot.
  • Heat the pot, pour oil, add chopped vegetables, and cook for 8-10 minutes.
  • Then add the blended peeled tomatoes, tomato paste, cooked beans, water, oregano, basil, salt and black pepper. Mix well and boil. When it boils, lower the heat and simmer for 10-15 minutes.
  • Then add the pasta and when the pasta is cooked, add the chopped spinach and finely chopped parsley. Simmer for half a minute and remove from heat.

Notes

I recommend soaking the beans overnight so that they cook quickly. Do not overcook it, because it should also be cooked in the soup later.
