Today I want to share a very good vegan/fasting dish recipe with you. It is prepared in just half an hour and is very different and delicious. The classic version of this dish uses chicken instead of lentils, so feel free to switch it up if you like.

Red Lentil Tikka Masala

Servings 5

Ingredients

  • 200 g red lentils
  • 100 g spinach
  • 1 onion
  • 2 cloves of garlic
  • 2-3 tbsp vegetable oil
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp paprika
  • to taste red pepper
  • to taste salt & black pepper
  • 400 g peeled tomatoes
  • 5 cm ginger
  • 1-1.5 cup water
  • 250 g rice (cooked for serving)

Instructions 

  • Finely chop onion and garlic. Peel the ginger and grate it finely.
  • Heat the pan, add oil, saute onion for 5-6 minutes, add garlic and continue sauteing for 1 minute. Then add ginger. In 30 seconds add peeled tomatoes and water, and mix well.
  • Simmer for 5 minutes, then remove from heat and blend. Add well-washed lentils and cook for 20 minutes, stirring as often as possible. During this period, the lentils will be cooked, do not overcook them. Add water if necessary.
  • Remove from heat and add chopped spinach, cumin, coriander, paprika, salt, black and red pepper. Mix well.
    Serve with cooked rice.
