These oat and banana cookies are incredibly easy to make. They turn out delicious, aromatic, and pleasantly textured.

Banana Oat Cookies

Ingredients

  • 110 g butter
  • 90 g brown sugar (sticky; if unavailable, substitute with 50 g white sugar)
  • 70 g white sugar
  • 1 egg
  • 1 large banana
  • 2 g vanilla sugar
  • 240 g flour
  • 180 g rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of salt
  • 1 tsp cinnamon
  • 80 g dark chocolate

Instructions 

Prepare Brown Butter:

  • Cut the butter into small cubes, melt it, and bring it to a boil while stirring occasionally. Foam will form; continue stirring until brown residue appears at the bottom. Once ready, remove from heat and let it cool. (Refer to the video for the final result.)

Mash the Banana:

  • Mash the banana with a fork, then add the egg, both types of sugar, and mix until combined.

Mix Dry Ingredients:

  • In a separate bowl, sift together the flour, oats, baking soda, baking powder, vanilla sugar, a pinch of salt, and cinnamon. Add the wet ingredients and mix thoroughly.

Add Chocolate:

  • Stir in chopped dark chocolate and mix again. Shape the dough into balls (about 2 tablespoons each) and place them on a baking tray lined with parchment paper, leaving 2-3 cm of space between each ball.

Chill and Bake:

  • Chill the dough balls in the refrigerator for 40 minutes. Then, bake in a preheated oven at 180°C (356°F) with top and bottom heat for 12-14 minutes.

Cool and Serve:

  • Let the cookies cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.
