Mercimek Çorbası is a Turkish dish, that translates as lentil soup, although it is more of a cream soup than a soup. I heard about this dish from my friend, she also gave me the recipe, but then I saw different versions and chose one of them. I like every detail about this soup – it’s cheap, easy, quick to prepare, tasty, and quite healthy. It is a dish that I will prepare often and I recommend you to try it too.

Red lentil soup – Mercimek Çorbası

Servings 6

Ingredients

  • 250 g red lentils
  • 1 carrot
  • 1 potato
  • 1 onion
  • 1 tbsp tomato paste
  • 3 tbsp olive oil
  • to taste salt
  • 1.5-2 l water
  • lemon

Instructions 

  • Finely chop the onion, and cut the carrot and potato into cubes.
  • Heat the pot, pour oil, and cook the onion, when it softens, add carrots and potatoes, mix well, then add tomato paste. After 3-4 minutes, add well-washed lentils and mix.
  • Pour 1.5 liters water.
  • When the water boils, simmer for 25 minutes on low heat.
  • Blend, add salt, and, if desired, water until the desired consistency is obtained.
  • Bring to a boil and remove from heat.
  • Pour lemon juice when serving.
