Burrito belongs to Mexican cuisine, it is a well-known shawarma-like dish. Its main ingredients are meat and beans wrapped in a tortilla (we will use lavash). They also add different vegetables, cheese, guacamole, or avocado… Since today we are making a fasting/vegan version, of course, we will not use meat and cheese, but as a result, we will still get a delicious burrito.

Ingredients

  • 2 pcs tortilla or lavash
  • 2/3 cup beans
  • 1/2 cup rice
  • 1 red bell pepper
  • 1/3 head of red onion
  • 1 Jalapeno pepper
  • to taste corn
  • to taste lettuce
  • to taste avocado or Guacamole

Instructions 

  • Cook the rice and the beans as usual. (When the water boils, pour it out and boil it in freshwater).
  • Mash cooked beans with a fork along with the boiled juice, add rice, a little salt and mix well.
  • Fold the lavash in half, spread the mixture of rice and beans in its center, so that 3-4 cm remain free on the edges. Spread guacamole or avocado slices on top, sprinkl with chopped onion, corn, lettuce leaves (shredded by hand), jalapeno pepper cut into rings, red bell pepper cut into juliennes (cut into long and thin slices). Cover the sides, then the top part and roll it up.
  • Place in a heated pan for 3-5 minutes on each side.

Notes

I recommend soaking the beans the night before so they cook quickly.
