
Pea & Mint Soup
Ingredients
- 6 potatoes (medium-sized)
- 350 gram pea
- 6 mint (leaves)
- 1 tbsp olive oil
- 1 onion
- 3 cloves garlic
- 1.5 liter water
- salt & pepper (to taste)
Instructions
- Pour oil into a heated pot, add finely chopped onion, and cook for 3-4 minutes, then add finely chopped garlic and mix well.
- After 1 minute, add diced potatoes, sprinkle with salt & pepper, mix well.
- Add water, bring to a boil, and simmer over low heat for 15-20 minutes.
- Once the potatoes are soft, add green peas and mint leaves, bring to a boil, and remove from heat.
- Use a immersion blender to make a smooth creamy mass.
- Finally, add salt & pepper to taste.
- When serving, you can add greek yogurt and mint leaves.Bon Appetit!
