Zucchini soup with avocado and mint
Ingredients
- 2 pcs. zucchini
- 1/2 avocado
- 1 onion
- 1 clove of garlic
- 2 tbsp mint (finely chopped)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 850 ml water
- to taste salt & black pepper
Instructions
- Finely chop onion and garlic, and dice zucchini and avocado.
- Pour oil into the hot pot, add onion and garlic, and cook for 5 minutes. Then add the zucchini and continue sauteing for 10 minutes.
- Add water and bring to a boil, then remove from heat and add chopped avocado, and mint, salt and, black pepper to taste.
- Blend all this and add lemon juice. Mix well.
- Serve warm with garlic croutons.Bon Appetit!
