Zucchini soup with avocado and mint

Total Time 30 minutes
Servings 6


  • 2 pcs. zucchini
  • 1/2 avocado
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp mint (finely chopped)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 850 ml water
  • to taste salt & black pepper


  • Finely chop onion and garlic, and dice zucchini and avocado.
  • Pour oil into the hot pot, add onion and garlic, and cook for 5 minutes. Then add the zucchini and continue sauteing for 10 minutes.
  • Add water and bring to a boil, then remove from heat and add chopped avocado, and mint, salt and, black pepper to taste.
  • Blend all this and add lemon juice. Mix well.
  • Serve warm with garlic croutons.
