Finely chop onion and garlic, and dice zucchini and avocado.
Pour oil into the hot pot, add onion and garlic, and cook for 5 minutes. Then add the zucchini and continue sauteing for 10 minutes.
Add water and bring to a boil, then remove from heat and add chopped avocado, and mint, salt and, black pepper to taste.
Blend all this and add lemon juice. Mix well.
