And now as for today’s recipe, it is very simple, healthy, delicious and, what is quite relevant in this period, fasting.
Yellow split peas and vegetable puree (Greek Fava)
Ingredients
- 1 cup yellow split peas
- 1 onion
- 1 carrot
- 2 cloves of garlic
- 2 tbsp olive oil
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp thyme
- to taste salt & black pepper
- 1 tsp sugar
- lemon
- 2.5 cup water
Instructions
First of all, wash the split peas well, clear water should come out. Then pour water so that it is covered by 3-4 cm and let it sit overnight so that it cooks quickly. The next day, drain the water. Finely chop the onion and garlic, and cut the grated carrot into cubes. Heat the pan, pour oil, add onion and carrot, and saute for 5 minutes, then add garlic, yellow split peas, spices, salt, and black pepper, mix well and leave it for 3-4 minutes. Then add water, and sugar and bring to a boil, when it boils lower the heat and simmer until the peas are well cooked. If the water dries up, add a little. Finally, blend, you can add more water to get the desired thickness. Squeeze lemon after serving, you can also drizzle with olive oil.Bon Appetit!
