Yellow split peas and vegetable puree (Greek Fava)

Ingredients

  • 1 cup yellow split peas
  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp thyme
  • to taste salt & black pepper
  • 1 tsp sugar
  • lemon
  • 2.5 cup water

Instructions 

  • First of all, wash the split peas well, clear water should come out. Then pour water so that it is covered by 3-4 cm and let it sit overnight so that it cooks quickly. The next day, drain the water.
  • Finely chop the onion and garlic, and cut the grated carrot into cubes.
  • Heat the pan, pour oil, add onion and carrot, and saute for 5 minutes, then add garlic, yellow split peas, spices, salt, and black pepper, mix well and leave it for 3-4 minutes. Then add water, and sugar and bring to a boil, when it boils lower the heat and simmer until the peas are well cooked. If the water dries up, add a little.
  • Finally, blend, you can add more water to get the desired thickness. Squeeze lemon after serving, you can also drizzle with olive oil.
