Today I want to share cottage cheese pancakes that are loved by many. It is not sweet enough with the amount of sugar in the recipe, so if you like it sweet, you can add more sugar or serve it with some jam. It is especially good with hot tea.

Syrniki (cheese pancakes)

Servings 25 pcs.


  • 500 g cottage cheese
  • 4 tsp sugar (or to taste)
  • 3 tsp sour cream
  • 1 whole egg
  • 1 egg yolk
  • 1-2 tbsp raisins
  • 2 tbsp flour
  • 1/2 tsp salt
  • 2 g vanilla sugar
  • vegetable oil (for frying)


  • Put the cottage cheese in a bowl and beat it a little with a fork or hand whisk, then add the whole egg and egg yolk and mix well. Then add salt, sugar, vanilla sugar, 2 tbsp. flour and mix well, and finally add sour cream and raisins.
  • Add 1/2 cup flour to a plate. Roll small balls of cottage cheese mixture into the flour, then you can shape them.
  • Heat the pan, pour oil and fry the cottage cheese pancakes on both sides, they should get a nice golden color.
