Avgolemono – Greek chicken and lemon soup
Ingredients
- 1 kg cooked chicken
- 1.5 l chicken broth
- 1 carrot
- 1 onion
- 110 g rice ((1/2 cup))
- 3 eggs
- 1 lemon juice
- 1/3 bunch of dill
- 1 tbsp olive oil
- to taste salt & pepper
Instructions
- Heat 1 tbsp oil in a pot, add finely chopped onion and carrot and sauté, after about 5 minutes add chicken broth and rice.
- Simmer for 15 minutes. Meanwhile, whisk eggs and lemon juice together. Add a little broth and after 15 minutes slowly add to the soup, stirring continuously. At this time, the soup will thicken.
- Finally, add shredded chicken, finely chopped dill, salt and pepper. Simmer for 2 more minutes and the soup is ready.Bon Appetit!
