Avgolemono - Greek chicken and lemon soup

Ingredients

  • 1 kg cooked chicken
  • 1.5 l chicken broth
  • 1 carrot
  • 1 onion
  • 110 g rice ((1/2 cup))
  • 3 eggs
  • 1 lemon juice
  • 1/3 bunch of dill
  • 1 tbsp olive oil
  • to taste salt & pepper

Instructions 

  • Heat 1 tbsp oil in a pot, add finely chopped onion and carrot and sauté, after about 5 minutes add chicken broth and rice.
  • Simmer for 15 minutes. Meanwhile, whisk eggs and lemon juice together. Add a little broth and after 15 minutes slowly add to the soup, stirring continuously. At this time, the soup will thicken.
  • Finally, add shredded chicken, finely chopped dill, salt and pepper. Simmer for 2 more minutes and the soup is ready.
