Vegan Italian Wedding Soup

Ingredients

For balls

  • 400 g Canned or cooked white beans
  • 1 small onion
  • 3 cloves of garlic
  • 1 cup bread crumbs
  • 1 tsp basil
  • 2 tbsp soy sauce
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes
  • 1 tbsp olive oil

For the soup

  • 2 tbsp olive oil
  • 1 onion
  • 3 cloves of garlic
  • 2 medium carrots
  • 250 ml white wine
  • 2 l water
  • 1 tsp thyme
  • 90 g orzo pasta
  • 150 g spinach

Instructions 

  • The preparation of this dish has two stages: bean balls and soup.
  • First of all, let's prepare the balls. To do this, finely chop the onion and garlic, put them in a food processor, add all the ingredients needed for the balls, except oil, and pulse until well combined.
  • Make balls of the desired size, put them on baking paper or a foil-lined form, pour oil over them, and put them in an oven heated to 200°C and bake for 30 minutes.
  • Before the balls are baked, let's prepare the soup. Chop the onion and garlic finely, and the carrot into cubes. Heat the pot, pour oil, add onion and carrot, and saute. After 10 minutes, add garlic, and after 1 minute, pour wine, bring to a boil, and simmer for about 4 minutes, the amount of wine should be reduced by half.
  • After that, add water and thyme, bring to a boil, and simmer for 10 minutes, uncovered.
  • Then add pasta and spinach, a little salt, cook for 8 minutes, and then remove from heat.
  • When serving, first take out the prepared balls in the dish, and then pour the soup.
