The first version of the energy balls generated quite a lot of interest among blog readers, so today I have to share another version of its preparation with you. As always, I’ll be honest and tell you that today’s version is much tastier. It takes a little more time to prepare, because first we make yellow balls, in the heart of which we put peanuts, and then we wrap them in a black layer. If you love snacking, and I think 95% of you do but want to avoid sugar, this sweet snack is for you. It has 0 sugar and an extraordinary taste, so try it.

Energy Balls (version 2)

Ingredients

Yellow part

  • 3/4 cup roasted peanuts
  • 1/2 cup dates (pitted)
  • pinch of salt
  • 20 pcs. peanuts

Brown layer

  • 1.5 cup roasted peanuts
  • 1.5 cup dates (pitted)
  • 1/4 cup cocoa powder
  • 1 tsp salt
  • 1/2 tsp water

Instructions 

  • To prepare the yellow part, place peanuts in a food processor and grind them finely as shown in the video. Then add the dates and salt and turn the food processor on high again. You should get a homogeneous, sticky mass.
  • For each ball, take 1/2 tbsp of the mixture, roll it in the palm of your hand, put a peanut in the middle, and round it.
  • To prepare the brown layer, first put peanuts in a food processor and grind them finely. Then add dates, cocoa, and a pinch of salt. Turn on high speed again, and finally add water and turn on the processor again for a few seconds.
  • Roll 1 tablespoon of the brown mass on the palm of your hand, place a yellow ball in its center, and round it.
