Chvishtari is a traditional Georgian cornbread with cheese, known for its crispy exterior and soft, cheesy center. Simple yet flavorful, it’s a perfect comfort food that pairs wonderfully with pkhali, another Georgian classic made from vegetables and walnuts.

Chvishtari with Corn Kernels and Smoked Sulguni

Total Time 30 minutes

Ingredients

  • 300 g corn flour
  • 280 ml sparkling mineral water
  • 60 g corn kernels
  • 140 g smoked or regular sulguni cheese
  • to taste salt
  • vegetable oil (for frying )

Instructions 

  • Add salt to the corn flour, stir, pour in the mineral water, and knead the dough.
  • Add the corn kernels and grated sulguni cheese, and knead again thoroughly.
  • Shape the dough as you like; I prefer round shapes. Fry in a heated, oiled pan on both sides. The heat should be medium-low.
  • Place the fried Chvishtari on a kitchen paper to drain any excess oil.
