Khachapuri is one of the most beloved and iconic dishes in Georgian cuisine. With countless variations across different regions, each recipe brings its own unique twist. Today, I’m excited to share my favorite recipe for an ideal, irresistibly delicious khachapuri that’s sure to satisfy your cravings.

Ingredients
For the dough:
- 600 g flour
- 300 ml warm water
- 6 g yeast
- 15 g sugar
- 5 g salt
- 40 ml vegetable oil
For the filling:
- 750 g Imeretian cheese
- 1 egg
- 20 g flour
- to taste salt

- Butter for brushing on top.
Instructions
- Dissolve the yeast and sugar in warm water, cover with plastic wrap, and let it sit for 10 minutes.
- Sift the flour into a large bowl, add salt, and mix. Add the yeast mixture and knead the dough.
- Lastly, knead in the oil. The dough should be soft and not sticky. Lightly coat with oil, cover with plastic wrap, and let it rise in a warm place for about 1 to 1.5 hours.
- For the filling: Grate the cheese and mix with the egg and flour (add salt if the cheese is unsalted), then knead well with your hands. Divide into three equal portions and form into balls.
- Divide the risen dough into three equal balls as well. Let the dough balls rest for another 10-15 minutes.
- Roll each dough ball slightly, place the filling in the center, seal the edges, and flip over. Roll out on both sides until it reaches about 30 cm in diameter.
- Bake in a preheated oven at 230°C (450°F) for 8-12 minutes with both top and bottom heating. When it’s nicely browned on top, remove it and brush with butter.Enjoy your meal! ❤️
