Today I want to share a very delicious dessert recipe with you. The photo of these donuts generated quite a lot of interest on the blog’s Facebook page, so I’m going to offer you the recipe today. It isn’t difficult to make. Follow the recipe exactly and you will get amazing results.

Berliner – German doughnuts

For the dough

  • 450 g flour
  • 250 ml hot milk
  • 50 g softened butter
  • 11 g active dry yeast
  • 40 g sugar
  • 1/2 tsp salt
  • 1 egg
  • 2 g vanilla sugar
  • 200-250 ml vegetable oil (for frying)

For the filling

  • 250 ml heavy cream
  • 250 g dark chocolate


  • To prepare the dough, place the hot milk, which burns your hand a little, in a bowl, add 2 teaspoons of sugar and yeast, mix well, then sift in 200 grams of flour and use a whisk to make it a uniform mixture, it will have the consistency of sour cream. Cover with plastic wrap or a tea towel and leave in a warm place to rise for about 20 minutes.
  • Meanwhile, in a large bowl, beat the eggs with the remaining sugar, salt, and vanilla with a hand whisk to mix the ingredients well, a few minutes is enough.
  • Mix both mixtures and add half of the remaining flour, knead the dough, slowly add the remaining flour, and finally, the softened butter (cut into cubes), knead the dough for 10-15 minutes.
  • Brush a little oil on the dough, cover it with a tea towel, and put it in a warm place to rise for about 1-1.5 hours. It should increase at least 2.5 times in volume.
  • Transfer the dough to a floured surface and roll it to a thickness of 1.5 cm. Cut out 5 cm diameter rings. Transfer the rings to a floured board, stack them at a distance of 2-3 cm from each other, cover them again with a tea towel, and leave to rise for 20-25 minutes.
  • Heat oil in a pot or a deep pan, place the donuts, and fry them on both sides. It cooks quite quickly, about 3-4 minutes per side, once it gets light brown, flip it over, the other side takes less time.
  • Take out the prepared donuts on a plate lined with a paper towel (use a towel that absorbs liquid well, it is better to put several layers on the plate), this is necessary to drain the excess oil from the donuts. I recommend changing the towel twice.
  • To prepare the cream, heat the heavy cream and add finely chopped chocolate, stir well, the chocolate should melt completely, then cool it well. You can fill donuts with the same thin mass, but I used a well-chilled, whipped, and fluffy cream. It depends on your taste.
  • To fill the donuts with cream, place the cream in a pastry bag, make a small hole on the side of the donut, and fill it with cream.
  • Finally, you can also sprinkle powdered sugar.
