Zucchini rolls with chicken and vegetables

Ingredients

  • 450 g zucchini
  • 1 cup beans (cooked)
  • 1 cup corn kernels
  • 2 cups tomato sauce
  • 2 chicken breasts (boiled)
  • 80 g Gauda

Instructions 

  • In a bowl, mix chicken fillet cut into small pieces, beans, corn kernels, and 1 cup of tomato sauce.
  • Spread ½ cup of tomato sauce on the bottom of the baking dish.
  • Cut the zucchini lengthwise into 2 mm thick slices (I recommend using a vegetable peeler).
  • Place 2-3 pieces of zucchini on the kitchen surface, put 2 tablespoons of the prepared filling, roll it up and place it in a baking dish. Repeat this step until the filling is finished.
  • Pour the remaining ½ cup of sauce on top of the rolls, sprinkle with grated cheese, and bake at 190 degrees for 20-25 minutes.
