Cut the chicken fillet into 1 cm thick slices (to help the marinade penetrate better). Pour olive oil, lemon juice over it, add spices, salt, sugar, and black pepper, then finely chopped garlic, and mix well. Cover with plastic wrap and leave to marinate in the refrigerator for at least 1 hour, preferably overnight.
Peel the potatoes and cut them into 1/2 cm thick slices. Add water and let them sit for 1 hour. Then drain the water, transfer to a tea towel, and pat dry. Fry in plenty of hot oil over medium-low heat for about 8-12 minutes. Remove the cooked fries onto a kitchen towel and sprinkle with salt while still hot.
Grill or pan-fry the marinated chicken pieces for a maximum of 3-4 minutes on each side.
To assemble the gyro, place tzatziki sauce, meat, French fries, and slices of tomato and onion on the pita, fold the sides over, and it's ready. (See the video for details)You can also assemble the gyro on a plate, as shown in the video and photos.
For the skepasti, mix all the sauce ingredients together. Spread the sauce on the first layer of pita, then add meat, bacon, and fries. Spread sauce on the second layer of pita as well and place this side on top of the skepasti.
