Chicken Vegetable Soup

Ingredients

  • 1 can Bonduel "Mexican Mix"
  • 1 onion
  • 2 tbsp olive oil
  • 2 potatoes
  • 1 tbsp flour
  • 1 l water
  • 400 g diced tomatoes
  • 2 chicken breasts (boiled)
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 bunch of parsley

Instructions 

  • In a hot oiled pot, fry finely chopped onion for 3 minutes.
  • Add diced potatoes and stir. After 3-4 minutes, add flour and mix well again.
  • Add water, tomatoes, and spices. Simmer for 12 minutes or until potatoes are tender.
  • Finally, add the chicken and cook for 3 minutes; add the Bonduel "Mexican mix" and finely chopped parsley, cook for 1 minute, and remove from the heat.
  • Add salt & pepper to taste.
