In a hot oiled pot, fry finely chopped onion for 3 minutes.
Add diced potatoes and stir. After 3-4 minutes, add flour and mix well again.
Add water, tomatoes, and spices. Simmer for 12 minutes or until potatoes are tender.
Finally, add the chicken and cook for 3 minutes; add the Bonduel "Mexican mix" and finely chopped parsley, cook for 1 minute, and remove from the heat.
