Chicken salad

Ingredients

  • 2 chicken breasts (boiled or grilled)
  • 1 avocado
  • 1 cup corn kernels
  • 150 g bacon
  • 4 pcs. green onion
  • 2-3 pcs. dill

Dressing

  • 3 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • to taste salt & black pepper

Instructions 

  • Cut the chicken breast into desired size pieces and place in a large bowl.
  • Add diced avocado, corn kernels, finely chopped green onion and dill.
  • Fry thin slices of bacon, transfer to a kitchen towel to drain excess fat, then cut into cubes and add to the salad.
  • Mix the sauce ingredients together and pour over the salad. Mix well. A simple and delicious salad is ready.
