Wash the potatoes thoroughly with a brush to remove any excess dirt and dust. Dry them and prick several times with a fork on all sides.
Sprinkle with salt and pepper, drizzle with 1 tbsp olive oil, and distribute evenly over the surface of the potatoes.
Place on a baking sheet and bake in a preheated oven at 175°C for about 1 hour. When a fork easily pierces the potato, they are ready.
While the potatoes are baking, prepare the tzatziki sauce and the toppings – dice the tomatoes into medium-sized cubes, slice the olives into thin rings, and chop the parsley.
