Quinoa is a new product for the blog, I am sharing with you the first recipe of a dish prepared from it, so first I will tell you about the health benefits of this product.
Quinoa contains all essential amino acids and is rich in protein, fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E, and various antioxidants.
Now what about this dish itself? It is very nutritious, healthy, as can be seen from the benefits of quinoa, and most importantly, delicious. It has a rather foreign taste, and soy sauce goes well with it. If you try quinoa alone, you won’t be impressed, but when you add mushrooms, you get a delicious dish as a result of the combination of flavors.

Quinoa with mushrooms

Ingredients

  • 500 g champignon mushrooms
  • 1 cup quinoa
  • 2 cups water
  • 1 clove of garlic
  • 1/3 bunch of parsley
  • 1/3 bunch of green onions
  • 2 tbsp olive oil
  • 2-3 tsp lemon juice
  • 2 tbsp soy sauce
  • to taste salt and black pepper

Instructions 

  • Cut the mushrooms into 4 parts, if small mushrooms into 2, transfer them to a baking dish, sprinkle them with salt, pour 1 tbsp of olive oil, and mix with your hands so that the salt and oil are evenly distributed. Put it in the oven heated to 220°C degrees and bake for 15-20 minutes.
  • Meanwhile, prepare the quinoa. Put the washed quinoa in a pot, pour water, and put it on the fire, bring it to a boil, then turn it down and cook it on low heat for 15-20 minutes, when all the water is absorbed, it is ready and take it off the heat, let it stand for 5 minutes and then fluff the cooked quinoa with the help of a fork.
  • Add finely chopped garlic, parsley, and green onion to the quinoa, pour lemon juice, 1 tbsp of olive oil, and soy sauce, sprinkle with salt and pepper, and mix well.
  • To serve: spread the quinoa on a deep plate, and arrange the roasted mushrooms on top.
